Best Everyday Kale Salad

This easy, everyday kale salad is delicious and full of nutrients, plus it comes together in under 10 minutes. It’s a perfect side with dinner, or a base for a heartier salad with added protein like chicken, shrimp, salmon or steak.
Ingredients
- 3 cups kale (curly or lacinato) - stripped, cleaned, and chopped
- 1/4 cup finely chopped red onion (or shallot)
- 1/2 apple of choice, diced (Fuji is a favorite)
- 1 cup chopped purple cabbage
- 2 TB sprouted pumpkin seeds (or chopped almonds)
- 1 avocado, diced
- 1 cup arugula
- A handful (1/2 cup or so) of fresh Italian parsley, roughly chopped
- 1 lemon, juiced
- 1-2 TB olive oil
- Sea or Himalayan salt and black pepper, to taste
Instructions
- Add chopped kale to bowl and top with red onion and cabbage.
- Add on top of kale, red onion and cabbage the juice of the lemon, about 1 tsp of salt and drizzle 1-2 TB of olive oil on top. Using clean hands, massage the kale and ingredients for for 2 minutes or so until kale is soft, darker and brighter in color. This makes kale much more enjoyable to eat. The leaves will be soft and much easier to chew and digest.
- Top with diced apple, pumpkin seeds or almonds, diced avocado, chopped parsley and toss. Serve and enjoy!
Notes
Other toppings you can add to this salad: Pomegranate arils, thinly sliced fennel, sliced figs, dried cranberries or cherries.
